khachapuri is good but if you cut in half to give part to one person someone gets the runny egg and the other person is left wanting
really my suggestion is the æbleskiver. they don't take long but do require special pans. quickly scoop the stuff in, then drop a bit of jelly in it if you like, then cover with a small bit more batter before turning. balls of fluffy pancake with fruit inside. top with a dusting of powdered sugar. you'll probably want to, like all pancakes, make them soon to eating them. other than buying a pan for them and having to whip egg whites before folding them in, there is pretty much no difference with cost to regular pancakes either in financial cost or time to make them, and i'd say you can make more of them than regular pancakes once you get going
you could also just make a shitton of perogies beforehand. since i'm lazy i just put instant mashed potatoes in them along with a bunch of shredded cheese and fried onions, boil them up to cook them through, and freeze them separately on a tray before putting them in a bag i nthe freezer (don't want them to freeze together). you can then boil them up a bit again to get them warm and fry them with more onions and butter. you can also fry them together with kielbasa or bits of bacon to impart meaty flavor. i have a special perogi maker to make them uniform but you can just use a round cutter and a fork.
