Dylan,
Hit up Greece, Italy, Norway or Germany.
Greece - despite political turmoil I bet its cheap to go there for tourists.
Italy - I mean, why not?
Germany - Rhine rivers, castles, history etc.
Norway - amazing summers, good lakes and forests etc.
I've been to Costa Rica and Belize in the last two years and haven't been very impressed honestly.
