When we try to detect signals using satellites, cell towers, etc. etc. we always use at least three receivers in order to triangulate and pinpoint the location. When I heard a sound, I can't pinpoint where it is because I only have two ears instead of three. Why is it that in millions of years of evolution or in God's glorious creation that we didn't pick up a third functional ear?

You can pinpoint location with 2, just not as good as with 3. Then you might as well ask, why not 5 ears, it would help you pinpoint even more. Probably the extra ear would have been only marginally useful.

parietal eyes exist; having a third ear doesn't mean it wouldn't be bilaterally symmetrical

still, you don't need three ears because you can pinpoint where sound is coming from due to the asymmetrical shape of the ears. sound is bounced around and funneled to the ear drum and the brain know how to take that information and determine where the sound is coming from. if you didn't, you'd be unable to tell the difference between sound coming at you from in front and behind you. but you can. so you don't need three ears.
