I say Merry Christmas, and I am an adamant atheist. I've yet to encounter anyone who felt awkward or wronged by being wished a Merry Christmas, so I've never understood the need for sensitivity. Now if I was in a synagogue or something, sure, I'd feel inappropriate saying it, but in day to day life, who cares? It's a pleasantry, and anybody who gets worked up over pleasantries is an asshole.
When you start with the culture-neutral expressions, where do you stop? Should I not saying "Have a good Thanksgiving" because it is a holiday based in large part around massacring indigenious people? It all seems kind of ridiculous to me. One of my buddies I used to play hockey with converted to Islam, which I despise as much as I do Christianity, and he sends me cards for Eid Al-Adha, and I appreciate the gesture.
True cultural diversity is acceptance of difference, not avoidance.
