Sounds like the Tex Mex phenomenon. I'm not diminishing TexMex, as I kinda like it, but the menus generally seem to be the same things over and over, leaving aside completely the other 90% of stuff found in the original cuisine. To most people Tex Mex is Mexican food, and they'll never know any different. You can get more authentic and broad latin American cuisine, but you have to look for it. There is a fantastic Peruvian place in my neighborhood...first time we went we recognized 3 dishes between us.
I have precious little experience with Cuban food and can't comment, but I'd worry about the same spectrum of dishes finding themselves on menus regardless, as seems to the be the case with most other imported and then fusioned cuisines.
