My wife is Irish.. Red Hair and all... I insult her Irish Heritage and Irish cooking almost daily..
To be fair she is actually a damn good Italian food cook.. But Irish food? There's no saving it, its worthless and tasteless..

Corned beef and cabbage isn't Irish. Similarly, Nachos aren't Mexican. Somehow it became associated with the Irish in NYC, I think, but beef wasn't even a meaningful part of Ireland's diet until the 20th century. You can find it over there...but for the tourists. Pretty much an Americanism.

Yeah, much of our 'ethic' food here is Americanized..
