Hmmm. Tough to pick one.
There are some cheeses that I like because I don't eat them often - meunster, havarti, gorgonzola, etc. Then, there are the normal ones for samiches and stuff - cheddar, swiss, colby, etc. Those all certainly have their uses. But, I don't think that any one of them is an ideal "all around" cheese.
But, parmesan is pretty good on just about anything. Put it on salads, pizza, burgers or whatever. Incorporate into batter for awesome fried foods. Bake in the oven for great cheese chips. I'd say that, while I rarely ever say, "Wow - this is the best" about parmesan, it's the one cheese that I've always got in my fridge and miss the most.
BTW, can anyone think of a food that cheese can't go with? So far, I've only come up with one thing - cereal. Thai food was close, but then I had some with a little goat cheese mixed in, and it was good.
