I had some brie once that was unpasteurized. Technically I believe it was illegal to sell it here in the US, but I was able to try a bit and it was one of my most memorable cheese experiences. It smelled raunchy as hell but it tasted so damn good.

As far as choosing one favorite cheese, I dunno, but the soft, gooey brie-like cheeses are always up there.

Not sure why the idea of fish and cheese is so revolting to some of you guys, I'd imagine it's quite nice.

Never had it, because I don't eat a lot of fish, but the flavours would seem complementary to me.
