BTW, I had this grilled cheese once that was made with brie, mushrooms, and rosemary. I can't remember the bread, but I think ciabatta. It was........f**k win.
EDIT: Just looked it up: double creme brie, local mushrooms, diced onions, rosemary on ciabatta.
It was glorious.
