I don't know, haven't really been adventurous enough to try stuff. There was something called tacos de cabeza at a Mexican bus stand, but I wasn't brave enough to try it. I did have barbacoa tacos in Chiapas though. The meat had probably been sitting out in the sun. It was slightly lukewarm by the time it got to my table and had a funny taste. At the time it wasn't too bad, but in the aftermath...definitely most memorable meal of my life.
