falafel is pretty easy, but I find the lebanese version far superior. fluffier. same with humus.
Though I never make them (but knew how) since I know where to get it where it's much better than my attempts would serve.
For the OP, forgot a stir fry is super easy to make. just dice chicken up, add spides, marinate in terriyaki or soy, and buy one of those frozen veggie packs from trader joes (yes I usually do it fresh these days, but as a student...) and cook the chicken in the pan and then throw in the veggies. Rice in a pot. Done and done.
