I did the same. I'm still on the first island but I've got just about everything. But man...
I love swimming across a river, noticing a deer on the bank, continuing to swim up to it and OUT OF NOWHERE A f**k CROCODILE LUNGES AT THE DEER, SNAPS ITS JAW AROUND THE DEER'S TORSO, AND EATS IT.
That was a bit of a "O SHIT" moment.

My wtf moment was gliding into an outpost, detaching onto a roof, then accidentally pressing A and initiating a death from above takedown on two guys... it was so seemless it looked like an action movie sequence.
Also the first time getting attacked by a shark... basically shat myself.
